Full to the brim of veggies, this zucchini slice packs a punch on the flavour scale. The dish is delicious both warm and cold, and is even better made the night before.
*2 whole eggs
*3 egg whites
*2 cups of grated zucchini
*1 cup of grated carrot
*1 large onion diced
*1 cup of frozen corn kernals
*1 large chopped tomato
*3/4 cup self raising flour
*1 cup grated cheese
Preheat oven to 180 degrees
In a large bowl, beat the whole eggs and the whites well.
Add all the other ingredients and 2/3 of the cheese. Mix well.
Spoon the mixture into a greased quiche dish and top with the remaining cheese.
Bake for 40 minutes or until golden brown.
