MONDAY MUNCHIES - Easy Pizza Scrolls
Monday munchies returns this week after a three week break while I traveled around the country side. We had a fabulous holiday, and I cant wait to share it all with you. But more of that later....
EASY PIZZA SCROLLS
These pizza scrolls are SO easy to make, with just a few basic items, you can make them as simple or as lavish as you like. Great for the lunch box, or to just have on hand for those who cant resist snacking.
INGREDIENTS
* Puff pastry
* Tomato paste
* Grated cheese
* Diced ham
* Pizza salami
On thawed pastry, spread tomato paste evenly on the square, making sure to reach the edges.
Layer the meats and cheese, then roll the pastry into a large sausage.
Cut into slices, and place on a lined tray.
Cook at a medium heat until golden and puffy.
these pizza scrolls can be frozen for up to a month.
A hit with my boys, I have to make them quite regularly as they never last very long.
Enjoy

AROUND HERE LATELY
Life has been busy this past week and a half. Its always busy, but with hubby and I hitting the road for a much deserved holiday in two days, it has been utter chaos.
Last week I posted how we are hitting the road without the teens. You can read that post here . So you can imagine the amount of work that goes in to make sure the teens (all male) are prepared for their
Food, I have been cooking like a mad woman, stocking up the freezer making sure that they at least get a few good meals. All the boys can cook, its something that I have made sure of, but lets be honest, I know for a fact that when mum is not around it is SO easy to take the easy road.
Lists, I have written so many for the boys that I have them coming out of my ears. What to do when, how and a few whys.
Cleaning, like an idiot and asking myself why, when I know that when we return the house will need everything including the kitchen sink scrubbed to within an inch of its life. That is just something that I have had to try and prepare myself for over the years. It has been hard, believe me as I am a clean freak.
Packing, I hate packing. I don't even know where to begin. I mean hello Queenslander heading to Melbourne. I think we are going to freeze but hey, I cant wait.
In other news....
My youngest son, went and got himself a part time job ! Boy do I feel old now. I never thought this day would come around so fast, but here it is. I am one proud mumma.
Did anyone else see the Hover Board on Sunrise this morning ? Marty McFly your chariot awaits.
I wonder if there will be a big celebration October 21st this year ? I think I heard somewhere along the way that they will be showing the movies in cinemas again. I will be there, will you ?
And in the saddest news to cross my social media today is this.....
Ahhh Kermit, its not easy being green. What is happening to this world we live in when even a pig and a frog cant make it. There goes my childhood.

MONDAY MUNCHIES - Grandmas Old Fashion Curried Sausages
GRANDMAS OLD FASHION CURRIED SAUSAGES
I remember when I was young my Nan serving me her curried sausage recipe. Its one of many recipes that she gave me when I got married, and that I now cook for my kids. This is by far one of my kids most favourite meals, and one that gives the boring old beef snag a hit of flavour.
INGREDIENTS
*10 - 12 beef sausages (thick or thin)
*1 tablespoon of butter
*1 tablespoon olive oil
*2 sliced onions
*Curry powder (use as much or as little as you like)
*A good old squirt of tomato sauce
*1 vegetable stock cube
*1/2 cup of water
*3/4 cup of milk
Brown the sausages in the oil and set aside.
Add the butter, curry powder and onion to the pan and cook until soft.
Add a good squirt of tomato sauce and stir well to combine.
Add the sliced sausages to the pan with the stock cube and water. Mix well and bring to the boil.
Reduce heat and add the milk, allow to simmer reducing the liquid until it thickens.
Serve with a steaming side of rice.
Enjoy

WE ARE HITTING THE ROAD
Hubby and I are packing our bags and heading off on an adventure without the teens.
Lets repeat the shall we WITHOUT THE TEENS.
We are taking our chances, leaving the mild Queensland Winter weather behind us and heading south into the not so mild, rather freezing temperatures of Melbourne.
Can you believe that we have never been there ?
Can you also believe that we are driving, all the way from Mackay ?
I have been spending the past week or so scouring the shops, looking for "appropriate" clothing. Living where we do, it has almost been a "mission impossible"
Look out Nikki I will be stalking your blog this week for all your tips :)
So as we continue to prepare our for our journey south, and I continue to stock the fridge for the teens being left behind to fend for themselves, I was rather hoping that one of my lovely Melbourne readers, or anyone who has had the pleasure of being a guest in the beautiful state of Victoria, may be able to point us in the right direction of the "must see sights" for first time visitors pretty please, it would be very much appreciated.

for those of you who are not familiar with our family and are concerned that we are leaving our teens at home, our eldest son is 22 and the boys Grandparents are not very far and will be stopping by often.

THESE ARE A FEW OF MY FAVOURITE THINGS - WINTER 2015
I can't remember the last time our temperature hit single figures here in Mackay. The last few mornings, we have hit a low of between 7 and 9 degrees. Time to dig out those warmer PJ 's and cozy slippers. Normally I am a lover of hot weather, but after such a long, extremely hot and tiring Summer, this Winter chill is very munch welcome.
There are so many things to enjoy at this time of year.
And these are a few of my favourite things.....
Last month I cut all our rose bushes back, hacked them really, but its done them the world of good and both are full of blooms again putting on a real show. There is nothing like masses of flowers to brighten the cold chilli days.
I'm loving how the afternoon sunlight is filling my front hallway, bouncing off some of my favourite household items.
And my very favourite thing about Winter....
Snuggling down at the end of a busy day with a good book and fresh linen on the bed. There is nothing like clean sheet day.
Linking up my favourite things over at With Some Grace for FYBF
